The subjects chosen for the study were mildly demented elderly people living alone. Eleven subjects screened, using the NM scale, for the severity of their dementia. In this study, eating behavior was defined as a series of processes of \"obtaining food, cooking, serving and eating\". These processes were investigated by observing the subjects at lunch time, and rating the safety of their eating on 10 behaviors previorsly chosen by the researcher. It was found that not every \"eating behavior\" decreased in safety as dementia advanced. \"Food intake\" and \"table-setting\" remained safe regardless of dementia level. With increasing dementia the safety of \"food preservation\" and \"food discarding\" decreased more than the safety of \"coking\". Furthermore, subjects of lower dementia (38～33 on the NM scale) were safer performing behaviors in which other take part than in \"behaviors done by themselves\". These results suggested that understanding \"eating behavior\" as a series of processes was important, and detecting how much a little different eating behavior are actually affected by level of dementia.
